Michelin star restaurant Alouette reopened in 2024, but the legacy carries on.

Restaurant Alouette has a Michelin star in the Michelin Guide Nordic, which it received in 2019 after only being open for a year. It has kept it ever since. Alouette is run by American chef Nick Curtin and his wife Camilla Hansen. Together with his partner, Andrew Valenzuela, who is also from the US, they run the kitchen, drawing inspiration from the many cuisines of the US and their time at some of Copenhagen's top restaurants, including Noma. Noma, where they both worked previously.

The style of the kitchen is not characterised by any dogma other than what comes through the door of the best seasonal ingredients. At Alouette, the quality and relationship with their products and producers is everything in their cooking. There is a 12-15 course menu that constantly changes with the seasons.
