In a basement in Brønby, just outside Copenhagen, you'll find Funga Farm. Funga Farm is an urban farm that differs from what you might typically associate with traditional Danish agriculture. They grow mushrooms exclusively with an ambition to deliver ultra-local, organic and sustainable craftsmanship. In an almost scientific way, they produce organic mushrooms that are sold to local restaurateurs in Copenhagen and the surrounding area. The founder of the Copenhagen Mushroom Farm is Thomas Kyle Cometta. He is a self-taught mushroom grower and closely follows the mushroom's journey from spore to full-grown mushroom that ends up on the plate. Mushrooms are packed with nutrients and have a deep umami flavor, making them the perfect sustainable alternative to meat.
Funga Farm supplies mushrooms to local restaurants, but if you're curious about how mushrooms are grown and its life from spore to harvest, the farm offers tours from time to time. The mushroom production includes oyster mushrooms, coral tooth, cinnamon cap and many others. On the tour you can experience the beautiful, colorful and diverse mushrooms that artistically fill the basement shelves. You can read more about their tours on the Funga Farms website.
