Located on Sankt Peders Stræde in the heart of Copenhagen’s Latin Quarter, Vækst puts greenery centre stage, both on the plate and in its interiors. Here, Nordic vegetables meet a lush greenhouse and the atmosphere of a Danish summer evening.
In the kitchen, the menu takes its cue from Nordic vegetables and fresh herbs, which play a leading role in many of the dishes. Vækst is not a vegetarian restaurant, though. There is also room for a good steak, seafood and fresh fish, combining a vegetable-forward approach with more classic ingredients.
The restaurant’s most distinctive feature is the large greenhouse stretching through its two floors. Filled with hanging plants and greenery, it brings nature into the restaurant and creates a lush contrast to the surrounding streets of central Copenhagen.
As evening falls, small lights illuminate the greenhouse and plants, creating a warm and relaxed atmosphere reminiscent of a Danish summer evening. The result is a restaurant where the menu and surroundings naturally complement each other, with greenery as a recurring theme without becoming too dogmatic.
